Ingredients
1 head lettuce, torn into pieces (4 carbs)
1 head cauliflower, broken into bite size pieces (16 carbs)
1 pound bacon, fried and crumbled
Dressing:
1 cup mayonaise
8 packets sweet n low (8 carbs)
1/2 cup buttermilk (4 carbs)
3/4 cup parmesean cheese


Directions
Step: 11 head lettuce, torn into pieces (4 carbs)
1 head cauliflower, broken into bite size pieces (16 carbs)
1 pound bacon, fried and crumbled
Dressing:
1 cup mayonaise
8 packets sweet n low (8 carbs)
1/2 cup buttermilk (4 carbs)
3/4 cup parmesean cheese

Combine dressing ingredients and set aside. In a large bowl, combine lettuce, cauliflower and bacon. Add dressing right before serving and stir well. Total carbs per recipe: 32 Serves 8, at 4 carbs per serving.

Note: Once you have added the dressing, the salad needs to be eaten right away. After a couple hours, it gets all wilted and isn't good. If I am making this just for myself, I keep the jar of dressing in the fridge and just add a small portion to the salad I have mixed up. It keeps for weeks in the fridge.
