Blackened Chicken Salad

2/3 Medium sized/boneless chicken breasts

Combine in a sm. mixing bowl: (2tbsp salt, 1tbsp white pepper, 1 1/2tbsp black pepper, 1 1/2tbsp garlic powder, 1tbsp onion powder, 1 tbsp cumin, 1/2tbsp cayenne pepper, 1/2tbsp paprika)

1/2cup melted butter, unsalted
1 16oz bag of Dole Salad Mix
1 bunch green onion, chopped
1 med. tomato, diced
1 egg, diced
3or4 med. mushrooms, sliced
1 med. green pepper, diced
1 sm. red onion, diced
1 cup of sharp shredded cheddar cheese
Jalapeno Peppers (optional)
Step: 1Salad - Mix all vegetables and cheese together in a large mixing bowl. Chill in mixing bowl until chicken is done completely.
To prepare chicken, bake in oven at 350 for 40-50 minutes. Take out chicken and cool for 5-10 minutes. Slice chicken breast into strips about 1/2" thick and 1" inch long. Place strips back into baking dish. Add melted butter overtop of the chicken and mix till all chicken is covered. Add seasoning mixture overtop of chicken/butter mix and stir until all is covered w/seasoning. Bake at 400 for 10-15 minutes. Take out & let stand for 5-10 minutes. Mix strips into salad mixture. Serve w/Bleu Cheese dressing, or the dressing of your choice. Magnifique
