1/2 tsp of lemon juice
1 cup of vegetable oil
Step: 1In a blender throw in egg and lemon juice. Turn on blender. SLOWLY SLOWLY drizzle veggie oil, drop by drop first, then drizzle until it forms a mayonaise texture. I personally like to add chipotle peppers in adobo sauce and a roasted garlic bulb for chipotle mayonaise.. and another variation; roasted serrano chili's, skin and seeds, a touch (1/2 tsp) of my favorite mustard, a 1/2 teaspoon of balsamic vinegar, a bulb of roasted garlic, and 1/2 cup of fresh cilantro to the blender. I use these mayonaise in chicken salad, or as a dip for my grilled chicken or fish... Very very flexible.
