|2lbs. of lean ground beef
1 cup water
2 packages of taco seasoning mix
large can chopped green chiles
two 8 oz. pkgs. of softened cream cheese
2 cups of grated cheese
|Step: 1||In a skillet, cook 2lbs. of lean ground beef. Drain fat, then add 1 cup water and 2 packages of taco seasoning mix. Continue cooking and stirring occasionally on simmer for 10 min., or until most of the liquid has evaporated.
Meanwhile, combine one large can (or more if you like) of chopped green chiles with two 8 oz. pkgs. of softened cream cheesse. When the ground beef is ready, layer it on the bottom of one large (8 x 13) baking dish, or two pie plates. Spoon the cream cheese mixture on top, spreading evenly. Last, top with 2 cups of grated cheese (Mexican blend, cheddar, whatever you like). Bake in 350 degree oven for 10 minutes. Serve with toppings of chopped tomatoes, olives, and/or onions (served on a bed of chopped lettuce) OR use as a dip (my favorite) on broken WASA crackers. Leftover dip keeps well refrigerated and when microwaved, provides a quick snack or lunch.
