Hollandaise and Bernaise

Prep. TimeDepends how fast you are, very quick to prepare
2 large yolks 1/2 cup clarfied butter( clarified, melt butter spoon off white impurities)
dash lemon juice
dash Tarragon to taste (for the bernaise)

Step: 1You can use a double boiler for larger amounts.Otherwise boil water in a pan. Bring to a simmer. In a steel bowl that fits over the pan add your egg yolks, dash of lemon and slowly whip in the clarified butter.If making bernaise follow the above procedure but add enough tarragon to change the taste
