This is awesome! I like it with extra cheese and garlic salt (uh oh)
parmesan cheese
ground sausage
cottage cheese
ricotta cheese
2-3 canned tomatoes
cheese (mozerella, colby, whatever u want)
Step: 1Prepare the eggplant the same way as the recipe for wet burritos slicing real thin strips and soak in salt water while preparing other ingred. Take the canned tomatoes and put in a pan, add your favorite seasonings for spaghetti sauce, I like lots of garlic, onion, basil, oregano, etc. (i add tomato juice for more sauce)
Let this simmer. Fry the sausage and hamburg together grounding it up real good. Then when its done add it to sauce then mix your cottage cheese, egg, ricotta cheese, parmesan cheese together. Rinse and strain eggplant noodles. In a cake pan put a little sauce on bottom and place the eggplant slices in a row to cover bottom and then add the sauce, cheese and add the slices for another row, you know the routine :) the top with last sauce and tons of Shredded cheese of your choice. Bake at 350 for 1 hour or until the eggplant is soft enough to cut your serving squares with no problem.
