|1/2 lb ground beef
1 lb block mozzarella cheese
1 lb block tofu (firm)
1 8 oz can tomato sauce
2 TBS tomato paste
1 cup water
1 med onion, chopped
2-4 cloves (1TBS)garlic, chopped
1/2 tsp basil, 1/2 tsp oregano
1 tsp parsley
2 bay leaves
(Optional) 1 cup ricotta cheese
|Step: 1||Sauté chopped onion and garlic in small amount of olive oil, add ground beef and sausage and brown.
Add tomato sauce, tomato paste and water. Add spices and bay leaves. Mix well.
Bring to boil, then lower heat and simmer for minimum 1/2 hour.
Slice the tofu block into long, thin and wide slices(to simulate lasagna noodles)
Slice the mozzarella block into thin slices.
In 9x9 pan, butter the bottom and place a little bit of meat sauce (to prevent sticking) then place strips of tofu to cover bottom of pan, cover tofu layer with meat sauce, and lay slices of mozzarella cheese over meat sauce. Start a new layer with tofu slices, meat sauce then cheese. Finish with cheese as the top layer.
Bake in 375 degree oven for 30 minutes, cheese should be slightly browned and well melted.
Let sit for 10 minutes before serving.
(If using ricotta cheese, this should be layered over tofu "noodles" before meat sauce)
Comments: the tofu (which doesn’t have much taste to begin with) takes on the flavor of the meat sauce and has a texture more similar to lasagna noodles than eggplant or cabbage. Until they were told most people didnt realize that it wasnt regular lasagna.
