6 thick pork chops
2 onions,peeled and chopped

Step: 1Using a pressure cooker, pour enough oil in the bottom to coat and heat on medium. Thoroughly brown the chops, 3 at a time, on all sides (the more they're browned, the better the "gravy"). Remove to a plate and brown the other 3. This takes about 1/2 hour or so. When done, remove the last 3 to a plate and pour some of the oil off, leaving just enough to coat the bottom of the cooker. Pour in the chopped onions and stir to mix which will also serve to deglaze the pan. Place the chops on top of the onions, close and bring up to pressure on medium heat. Cook for 20 minutes. When done, run cold water over the cooker to reduce the pressure. Remove the chops to serving plates and spoon the onion gravy over the top. These are very moist and tender and filling! This is a version of a recipe my Mom used to make, which originally also called for potatoes. I usually get my chops at Costco; boneless or bone-in are fine. Enjoy!
