2 Tables olive oil
1 med onion, sliced
2.5 oz jar slice mushrooms,drained
1/2 tsp basil
1/2 tsp fennel seed
2 cups mixed frozen vegetables
1 1/2 pound fresh or frozen catfish, sole, or flounder fillets,thawed
1/4 tsp salt
1/4 tsp pepper
2 medium tomatoes, sliced
1/3 c grated parmesan cheese
Step: 1In a large skillet over med heat, heat oil. Add onion, mushrooms, basil, and fennel seed. saute for 4 minutes or until onions are tender. Stir in frozen mixed vegetables. Place fish over vegetables. Sprinkle with salt and pepper. Arrange tomatoe slices over fish. Reduce heat, cover and cook for 12-16 minutes. Remove from heat and sprinkle with parmesan cheese and cover. Let stand for about 3 minutes.
