This wonderful low-carb dish was created by my sister Judy. It is so good, I've served it to my husband as his "special" birthday dinner; he had no idea it was also low-carb!!!
1-8oz package of cream cheese
1 red onion, diced
1 Tbs. white wine
1 tsp. paprika
1 clove of garlic, finely diced (prepared garlic is great for this recipe)
red-hot sauce to taste
2 cans of high quality crab meat (make sure to remove cartilage)
2 C. cheddar cheese
2 tbs. butter
4 pieces of mild white fish (I like roughy, but anything goes)
Step: 1Soften cream cheese (I prefer microwave soft)
saute onion and garlic in butter then add to cream cheese
along with wine, paprika, red-hot sauce, and garlic powder then mix well. Should be of smooth consistency.
Spread cream cheese mixture on bottom of glass baking dish.
Lay fish on cream cheese mixture, salt & pepper.
Cover with cheddar cheese.
Bake in a 350 degree oven for 30 minutes.
