1 lb. of large shrimp (peeled and deveined)
1 fish boullion cube
1 bay leaf
3 black peppercorns
1 red bell pepper (or any color)
1 green bell pepper
1 small onion
1/2 cup of fresh parsley
juice of 1/2 a lemon
3/4 cup of extra virgin olive oil
1/4 cup of vinegar (red wine, tarragon, or any good salad vinegar)
Step: 1In a medium sauce pan place shrimp, fish boullion, peppercorns, and bay leaf. Cover with water and bring to a boil. When shrimp turn opaque pink drain and set aside to cool. Do not overcook. Discard bay leaf and peppercorns. Dice vegetables and put in mixing bowl. Add lemon juice, olive oil, vinegar, salt, and pepper. Mix well. Once shrimp are cool enough to handle, dice them in halves and place them in mixing bowl with other ingredients. Mix well and refrigerate at least 1-2 hours. Great as an appetizer, side dish, or over avocado. Enjoy!
