Jessie's Cheesy Chicken Casserole

|6 Boneless Skinlees Chicken Breasts
1/2 of a purple onion
3 cups cheddar cheese
1/2 package of cream cheese
1 cup sour cream
|Step: 1||In a medium pot boil chicken breasts and chopped purple onion with 2 tsp salt, 1 tsp. pepper, 2 tsp garlic salt, and 2 tsp poultry seasoning. Cook until no longer pink, cut into 1/2" cubes.
Place half of the chicken pieces on the bottom of a baking dish, cover with thin layer of cheddar cheese, followed by a thin layer of cream cheese, and finally a thin layer of sour cream. Add the rest of the chicken and cover completely with cheddar cheese.
Bake at 350 for at least 15 minutes or until cheese has throroughly melted and ingredients combine.
NOTE: because cream cheese is the highest in carbohydrates, adjust amount according to your specific diet
