Hot Italian Sausage and Kale Soup

|Deliciious and low carb....hope you like garlic!|
|2 1lb packages of frozen chopped kale
1 head of garlic, peeled and cut roughly
8 sausage hot Italian links, casing removed, made into small meatballs
4 large boullion cubes
2tbs olive oil
crushed red pepper flakes to taste ( I use about 1 tbs!)
10 cups water
|Step: 1||Brown sausage meatballs until almost done, remove from pot and put aside. Remove remaining grease from pot.
Add 2 tbs olive oil and saute garlic until well browned. Add crushed hot pepper flakes. Add water and boullion (make sure boullion is all melted). Add 2 bags of chopped kale and sausage meatballs. Bring to a slow boil and simmer for 10 minutes. remove from heat and add 2 handfuls of grating cheese and stir.
|Approximately 3 carbs per 1 1/4 cup. This soup does great kept frozen in portions. travels better frozen for lunches...........Simply microwave from frozen and enjoy.|
