6 - Boneless, skinless chicken breast halves
2 - Cups chicken broth
8 oz - Ham or Canadian Bacon - Diced
4 cups - Cauliflower or Broccoli - Cut up
2 cups - Alfredo Sauce - I use bottled
1/2 tsp - Sage
1/2 tsp - Thyme
1 small - Onion - diced - or 1/4 cup dried
3/4 cup - Mozzarella - grated
3/4 cup - Sharp Cheddar - grated
1 tbsp - Cornstarch or 2 tbsp flour
1 cup - Fresh Mushrooms - sliced (Optional)
Step: 1In a medium sized saucepan combine chicken breast, chicken broth, sage, thyme and onion, cook over med. high heat, until chicken is cooked through (about 20 minutes). Remove cooked chicken and set aside to cool. In a separate saucepan cook cauliflower, just covered with water over med. high heat until done (Your definition of done. Mine is, still firm). While chicken and cauliflower are cooking saute mushrooms (if using them) in a small amount of olive oil in skillet until all water has been released. Remove and set aside. In same skillet heat ham a few minutes until edges are slightly crisped.

In the saucepan that you cooked the chicken, turn up heat slightly
and bring to boil. Mix Cornstarch with a small amount of cold water and add to broth. Cook for 5 minutes until slightly thickend. Whisk in Alfredo sauce and heat through.

Preheat oven to 375 degrees. Spray 9 x 11 casserole dish with no-stick cooking spray. Take cooked chicken, cut into bite sized bits and spread over bottom of casserole dish. Add a layer of each of the flollowing ingredients. Mushrooms, ham, cauliflower and pour heated sauce over everything, letting sauce run to the bottom of casserole. Cover with aluminum foil and bake for 20 minutes. Uncover and sprinkle with mozzerella and cheddar cheese. Return to oven and bake another 10-15 minutes until cheese is melted and slightly browned and bubbly. Remove and serve.
