|beans are a great source of protein, fiber, and folic acid. try this lighter bean recipe with some low carb bread or veggies.|
|2 c. of beans, such as cannellini, pinto,
or great northern
2 tbs. extra-virin olive oil
2 tbs. prepared horshradish
1/4 c. finely chopped onion
1/4 tsp. salt
2 scallions, trimmed and finely chopped
|Step: 1||in a blender or food processor, combine the beans, oil, horseradish, and onion. process until smooth, adding a little water of neccessary. sprinkle with the salt. garnish with the scallions.|

4g. carbs + 1g. fiber = 3 net carbs.
