Introduction
this recipe is quick and easy enough (requiring just a few ingredients) that i actually make it about once a week. because it has a little kick to it, it never gets dull, and it's very satisfying.
Ingredients
2 tbs. olive oil
1 bunch fresh basil, coarsely chopped
1 thai or serrano chile pepper, finely
chopped (wear plastic gloves when handling)
1lb. red snapper fillets
1 lime
salt, to taste
ground black pepper, to taste
Directions
Step: 1heat the oil in a large skillet over medium heat. add the basil and chile pepper and cool for 1min.remove from the pan and set aside. add the fish to the pan. squeeze the juice from the lime over the fish and sprinkle with salt and black pepper. cover and cook for 5 min. turn the fish and season with additional black pepper. cover and cook for 3 min. longer, or until the fish flakes easily.
