my husband really enjoys this dish. it is also great with chicken.
1 lg. lemon
2 tbs. olive oil
2 tbs. chopped fresh rosemary
2tsp. minced garlic
1/2 tsp. salt
1/2 tsp. ground black pepper
4 swordfish steaks (4oz. each)
lemon slices, for garnish (optional)
Step: 1grate 2 tbs of lemon peel from the lemon into a small bowl. squeeze the lemon into the cup. add the oil, rosemary, garlic, salt, and pepper and stir to combine, rub over the fish and place the fish in a large zip-top plastic bag. seal the bag and refrigerate for 1hr.
preheat oven at 450 f.
coat a 13" x 9" baking pan with cooking spray. place the fish in the pan. pour any remaining marinade over the fish. cover with foil.
bake for 12 min. or until the fish flakes easily. garnish with the lemon slices, if using.
