|1tbs. vegetable oil
1-1/2 lbs. eye of round roast, trimmed
2 onions, cut into wedges
3 carrots, coarsely chopped
1 green bell pepper, coarsely chopped
1 qt. beef broth
2 heads broccoli, coarsely chopped
|Step: 1||preheat oven to 350 f.
heat the oil in an ovenproof dutch oven over medium-high heat. add the beef and onions and cook for 7 min, or until browned. add the carrots bell pepper, and broth and bring to a boil. remove from the heat and place oon the oven.
bake for 20 min. longer, or until a thermometer inserted in the center of the beef registers 160 f. for medium doneness, let stand for 10min. before slicing.
|19 g carbs + 8g fiber = 11 net carbs per serving
