Serves/Yields1 dozen muffins,
2/3 cup GNC Soy Bake Mix
2/3 cup Soy Flour
2/3 cup Vanilla Protein Whey
2/3 cup Flax Seed Meal
2/3 cup Wheat Bran
4 Eggs
2 Egg Whites
8 Tbs Sour Cream or Mocha Mix
1 cup Splenda
1/3 cup Peanut Oil
1/4 cup spring water or seltzer water
1 tsp Baking Powder
Step: 1Combine all ingredients and bake at 350 for 25 minutes.
Makes 1 dozen muffins, (fill the tins to the brim) less than 7 carbs each.

1 Banana, 1/2 tsp Banana Extract and 1 cup chopped Walnuts

1 1/2 cup pumpkin pie filling and pumpkin spice (to taste)

1 1/2 cup Cranberries (cooked in microwave) and 1 cup chopped Walnuts, 1 tsp Orange extract

1 1/2 cup Raspberries or Blackberries and 1 cup chopped Pecans

I've been experimenting with different receipes and I think this is my best effort, not to mention best tasting. : )
