a delicious, nutritious low carb meal that me and my husband enjoy very much. we enjoy it with a steamed vegetable and springmix garden salad.if you like a smoked flavor try spreading some liquid smoke on steaks first.
4 oz.sliced mushrooms
1c.sliced onion
2tbs.chopped green peppers
2tbs.lemon juice
2tbs.olive oil
1/4tsp.dried dillweed
two small bay leaves
two tomatoes
salt and pepper
4 swordfish steaks(about 1-1/2to2lbs.)
Step: 1in a bowl, combine mushrooms, sliced onion, chopped green pepper, lemon juice, olive oil, salt and pepper, and dillweed. line a shallow baking pan with foil.spread 1/2 of the mushroom onion mixture on the bottom of pan then arrange swordfish on top. sprinkle steaks with salt and pepper, break bay leaves in half placing a piece on each steak.

cut tomatoes so that you have eight pieces. place two wedges on each steak then sprinkle remaining mushroom onion mixture over steaks.cover pan with foil and bake at 400 for 40 to 45 min. until fish flakes easily with fork.
