2 eggs
2/3 cup water (approx)
1/2 cup cream
1/2 cup soy protein isolate
1/2 teaspoon salt
1/2 teaspoon oregano
1/2 cup sharp cheddar cheese, finely grated
1 tablespoon minced onion
olive oil
Step: 1Mix all ingredients. Use about 1/4 cup batter for each pancake. Fry over medium high heat in nonstick skillet sprayed with olive oil until nicely browned on both sides. Serve warm with sour cream, cream cheese, etc. Or use warm as bread substitute. Thin batter with slightly more water for crepe-like style. Quantity depends upon amount of water used, but entire batch only about 6 carbs.
