Ingredients
Combine:
3 cups 105-115 degree water
1 package active dry yeast
After 3 to 5 minutes, when the yeast is dissolved, beat in:
2 cups gluten (not high-gluten flour---pure gluten)

Let this sponge rise in a warm place until light and foamy.

Combine, beat and then stire into the sponge:
1 beaten egg
2 tablespoons melted shortening or oil
1/2 teaspoon salt
optional: sweetener

Stir in:
2-4 cups of gluten

Use only enough gluten to make a dough that will knead well. After kneading, shape into 2 loaves. They will look strange, but don't be tempted to toss them out as they look great out of the oven. Let rise until doubled in bulk. Bake in a pre-heated 350-degree oven about 1 hour.

Nutrition Information
36-40 carbs for each entire loaf. Slices depend on you :-).
