So refreshing and simple! A fabulous summer meal!
4 large tomatoes
1 yellow onion
fresh basil (a handful)
dried oregano
extra virgin olive oil
2 garlic cloves
grated parmesan cheese
boneless, skinless chicken breasts
Step: 1Bruschetta topping:
Dice tomatoes, and onion, and chop the garlic. Add to a bowl, and season with salt, pepper, and oregano(as much as you like). Finely chop about a handful of basil leaves, and add to the tomato mixture. Sprinkle in the parmesan cheese, and drizzle with olive oil. Stir, and leave overnight in the fridge. Drain the extra juice from the mixture.

Season the chicken with salt and pepper, or marinate them your favorite way! Grill the chicken breasts, and serve with a heaping scoop of the bruschetta mixture! I've also eaten this mixture on broccoli, spinach, and just plain as a snack! Very refreshing!
