Introduction
I made this up tonight & it was just yummy! I'm not big on measuring, but
I tried to estimate as best as I could.
Ingredients
*2 chicken breasts, cooked & cut into bite-sized chunks (I boiled mine)
*1 package frozen chopped spinach, thawed & drained
*1 cup heavy cream
*white wine
*Parmesean &/or Romano cheese
*1/2 onion, chopped
*3 cloves garlic, chopped
*butter
*olive oil
*LC breadcrumbs
Directions
Step: 1Saute the onion & garlic in a pan over medium heat for a few minutes (don't let them brown) with olive oil. Add the spinach & couple tbsp butter. After a couple minutes, add about 1/2 cup white wine & about a cup heavy cream. Stir to thoroughly combine & let it come to a light boil for maybe 5 or so minutes. Stir in 1/2 cup grated parmesean & 1/2 cup grated Romano cheeses (or any combo of). Let it simmer for a few minutes, then pour the sauce over the cut up chicken breast. Sprinkle on some more cheese, then a light sprinkle of LC breadcrumbs. Bake at 350 for about 20 minutes, then let it sit for 5 minutes.
