Introduction
These are really moist and delicious muffins! I just came up with this idea this morning and I'm really happy with it!
Ingredients
1 cup soy flour
1/2 cup splenda
1 packet sugar free lemon jello
1tsp baking powder
1 tbsp baking soda
1/2 stick softened butter
4 oz softened cream cheese
1 cup whole milk ricotta
1/4 tsp salt
1 tsp vanilla extract
1/2 cup club soda
1/3 cup vegetable oil
1/3 cup heavy cream
1 cup blueberries (I used frozen)
2 eggs
Directions
Step: 1Preheat oven to 350 and line 12 muffin tins with paper liners.
With an electric mixer, blend butter, splenda, cream cheese, eggs, vanilla and jello.
Add the soy flour a little at a time.
Next, mix in all other ingredients, and fold in blueberries at the very end. Fill the muffin cups almost to the top, and bake at 350 for about 25 minutes. Enjoy! :-)
Nutrition Information
Makes 12 muffins at about only 2 grams of carbs each!
