2 lbs of catfish
Tony Chachere's Creole Seasoning
|Step: 1||While heating the grease to 350 degrees place the eggs in small bowl. Remove the yokes. (They ruin the grease)
Add lots of Tony Chachere's seasoning (or other seasoning to give it a dark color). Add salt and pepper to taste. Let the fish soak in the egg mixture for a few minutes. Next drop the fish in hot grease and cook for 7 minutes.
Good side dish is to slice sqush or eggplant, ect crossways thin and place in the same egg mixture and deep fry.
