|This dish is the kind you can put on before you go to church or run errands and have dinner done when you come back home!
It's good for 1 person to munch on all week or to feed a family of about 4.
I make this for my husband and myself and we eat on it for about 2-3 days. (sometimes it doesn't last that long ;-p)
|2-3lb Beef Chuck Roast
1 medium sized yellow onion, diced to desired size
1 pkg fresh button mushrooms, sliced - the bigger the slice the better the texture is in the end
1 can of cream of mushroom soup
1 can of beef broth
salt and pepper
OPTIONAL: If you're cooking for a mixed diet family, you can add chunks of carrots and red/yellow potatoes. If nothing else it will add that much more flavor to your beef
|Step: 1||Pre-heat your oven to 350 degrees. Pre-heat a large skillet to about medium-medium high.
Season your beef liberally with salt and pepper.
*Sear your beef for about 3-4 minutes on each side - depending on the thickness
While your beef is searing you can be dicing your onions and slicing your mushrooms
Take the meat out of the skillet and let rest in a deep baking dish
Add your onions and mushrooms and sautee until the onions are translucent and the mushrooms are giving off their moisture (keep tempurature at the same as with the beef)
Mix the soup and beef froth together and add onions and musrooms
Pour over the meat in the dish (lift the beef to make sure you have liquid on the bottom of the dish)
Cover with foil and lid if available
Bake for about 3-4 hours
Take out and let rest for about 15 minutes
Serve with "mock mashed potatoes" and salad or veggies
Gravy can be put over the "mock mashed potatoes" YUM!!
*Searing the meat helps to seal in the juices inside the beef and adds a flavor coating
