Just Like Scalloped Potatos
|Name||Just Like Scalloped Potatos|
|Prep. Time||30 minutes|
|3 med green zucchini's
1 C cottage cheese
1/3 C red onion
4 thick slices of ham, diced (8-10 if it is deli ham)
6 slices bacon
|Step: 1||Preheat oven to 350*. Slice zucchini into discs. Boil in salted water for 5 minutes. Drain*, and set aside . In a mixing bowl mix all ingrediants but bacon. Spray a 1.6 liter baking dish. layer zucchini, then mixture, than zucchini, etc until it is all used up. Layer uncooked bacon on top. Bake 1 hour.
I was just messing around.. and I swear it tastes JUST like scalloped potatos! Even Kevin likes it and he hates almost every ingrediant in it!!
* Make sure to drain zucchini well.. or you will have a little bit of water left over in the dish.
